What do you do for a living?
I’m an Interactive Multimedia Designer who works in a digital marketing agency. I’m passionate in creating visuals on variety of platforms including photography, illustration and 2D animation. I believe that colourful and meaningful artworks will bring joy to viewer’s life!

You've recently started to share your baking creations on your Instagram. Has baking always been a passion of yours?
Baking has always been my passion but I couldn't find a time to do it. Due to Movement Control Order (MCO) in Malaysia during March this year, I finally took the opportunity to start baking. It all started by creating the trendy Dalgona drink using Niko Neko Matcha powder during MCO period. As I really love eating bread, so I asked myself why not try to bake one? From there, I experienced the fun of baking.

What's the most enjoyable part of baking in your experience?
I love baking bread! The process of kneading dough with your own hands is so enjoyable! Even though it’s not easy to knead dough perfectly by hand, it’s so satisfying when I succeed! Besides, what makes baking enjoyable is when my creations look appetizing and visually appealing in the photo.

How did you come up with Houjicha Marshmallow Mousse recipe?
I came across a super easy-to-make recipe for mousse cake which only requires 3 ingredients and can be done in less than half an hour!

Why did you choose AKANE / Houjicha for this recipe?
This recipe contains dark chocolate, which matches well with AKANE / Houjicha’s deep cacao notes. Its high level of cacao notes, roastiness, and smokiness also help to balance the sweetness of marshmallow, as marshmallow is the main ingredient of this mousse recipe.

RECIPE

Houjicha Marshmallow Mousse

Ingredients

2 tsp AKANE / Houjicha powder
250ml Oat Milk (or other preferred milk option)
70g Marshmallow
10-15g Dark Chocolate
Some Roasted Almonds


Method To Assemble

  1. In Matcha Whisking & Measuring Cup, sift AKANE / Houjicha into oat milk and whisk until well combined with YUKIWA / Matcha Mixer.
  2. In a cooking pot, add in dark chocolate, houjicha mixture and marshmallow. Cook over low heat while continuously stirring until dark chocolate and marshmallow are melted and the mixture becomes smooth.
  3. Sift the mixture into desired mugs or ramekins.
  4. Store in freezer for 1-2 hours.
  5. Dust some AKANE / Houjicha powder and place a piece of roasted almond on top as finishing touch.

*Note: Serve it within 10-15min after taking it out of the fridge, as it will become runny if left at room temperature for too long.
