Tell us about @jw.works - what is this Instagram account is about?
I started jw.works as a place to share nice photos I had the opportunity to stumble upon — usually photos about interior, cafes & food. Basically anything that caught my attention. I'd also use the account to showcase some of my own works covering graphics works, food styling, calligraphy, photography and my recent interest — baking. I hope that I would be able to deliver my stories and message through my works.

How did you get into baking despite being a full time professional graphic designer?
I got into the baking trend during the MCO period. The shift to work-from-home, time became flexible thus making it easier to do things that I'm passionate about. I mostly spend the weekends tinkering with baking pastry & making dessert so juggle between work and kitchen fun during this period is pretty much manageable.

Where do you get your inspiration for your recipes?
My inspiration usually comes from desserts that I've tasted myself from different parts of the world, as well as those that I came across over IG and YouTube. I like to decorate my work nicely, as such, I do a lot of research online, which in turn also gives me inspiration for my next project!

How did you find using RIKKA / Wakoucha powder for this recipe?
RIKKA / Wakoucha is very rich in flavour, smooth in texture, and nicely combined with the creamy and milky butter cookie, giving a slight chocolate notes aftertaste.

RECIPE

Butter Cookie with RIKKA Filling

Preparation time: 35 min
Cooking time: 15 min
Total time: 50 min

Ingredients

75g Unsalted butter
40g Granulated sugar
20g Eggs
110g Cake Flour

Fillings
55g White chocolate
5g RIKKA / Wakoucha powder
100g Unsalted butter


Method To Assemble

  1. Soften butter and cream together with sugar until creamy and light. Add in egg, mix well.
  2. Fold in cake flour to the butter mixture and mix completely.
  3. Place parchment paper on top and roll out the dough into even thickness, chill/freeze in the refrigerator for 1 hour.
  4. Use a round cookie cutter to cut and bake for 12–15 minutes until the edge turning golden brown
  5. Melt the white chocolate and add in RIKKA / Wakoucha powder, well combined, set aside.
  6. Using YUKIWA / Hand Mixer to cream butter until pale yellow, light and fluffy. Add in RIKKA mixture, stir well and transfer to piping bag.
  7. Spread the filling on the bottom side of one cookie and top with second cookie. Chill in refrigerator for 30 minutes before eating.
