Inspired by her cafe hopping days, this home cafe allows her to recreate those moments and express her creativity by coming up with her own favourite recipes. Your food/drink photos on instagram are amazingly aesthetic and dream-like — how did your passion start?

I used to be a frequent cafe hopper in the past, as I always enjoyed the cafe atmosphere. There were a lot of cafes during the cafe trend waves – but after some time I found most of the menus to be similar & simple. As a home person, I started my "home cafe", and began decorating my home like a cozy cafe. I cooked & styled the food, and of course without wasting my effort, I took photos & shared them with my friends.

I found photography as a way to express my passion for food, and am lucky enough that I had some guidance from a close friend who loves photography as well. I did a lot of research on food photography. After a lot of trials and error, I questioned myself: “Why do I need to follow others? I should have my own style which is my home cafe”. That’s when I started to make my IG like a cafe’s account, but it’s actually my home, with the food that I passionately created.

What do you do for a living, and how do you balance work and passion?

I’ve been working in the fashion industry for years as a Fashion Designer & Merchandiser.
Being creative is a MUST in my everyday life. I love doing all sorts of styling & matching, even with food that I love! With creativity, everything can turn into something else, as long as you don’t restrict any possibility with those common knowledge.

    Any personal tips for your viewers on taking mesmerizing photos of their matcha creations?

    Bring out the best of the main subject that you need to present in the photos. Of course when it comes to food/drinks, the food in the photos should not only look good by its plating, but it must also be appetizing.

    I also chose dinnerware that best matches with the food/drinks that I’ve made. Sometimes a fancy background can be too overwhelming, so it’s better to keep the background as simple as you can.

    What is your inspiration for Matcha Vanilla Crepe Cake?

    Inspired by a failure flourless protein mug cake! I tried to make myself a microwave flourless mug cake, but it was a mess in my microwave. I tried the texture it's actually similar to crepes, in the same time I was figuring out what kind of cake to bake for a crazy body builder friend who's always on diet. So I decided to make a crepe cake instead & adjust the ingredients, it works well!

    Why did you choose KIKU / Matcha powder for this recipe?

    I chose KIKU / Matcha for its well balanced umami & bitterness, which won't be overpowered by the taste of vanilla.

    Personal tips for your recipe viewers when working with Matcha recipes.

    Always remember they are the main character in the recipe. Be careful when using flavorful sweetener such as honey, coconut sugar or maple syrup, they may dumb down the amazing matcha flavours.

    Matcha Vanilla Crepe Cake (Flourless + High Protein!)

    Recipe uses a 8x3" loaf pan
    Preparation: Less than 10mins + 10mins refrigerating the batter
    Cooking time: 8mins +-
    Total time: 28mins +-

    Ingredients

    Matcha Crepe (For 5 pcs of 4-inch crepes)
    1 Large Egg
    2g Stevia/Sugar
    4g KIKU / Matcha powder
    30g Milk (can substitute to any milk or just water)
    15g Whey Protein Vanilla Flavour 
    2g Vegetables Oil
    1/4 tsp Baking Powder

    Vanilla Crepe (For 5 pcs of 4-inch crepes)
    1 Large Egg
    2g Stevia/Sugar 
    25g Milk (can substitute to any milk or just water)
    15g Whey Protein Vanilla Flavour 
    2g Vegetables Oil
    1/4 tsp Baking Powder

    Cream cheese frosting (For 10pcs crepes)
    60g Cream Cheese (Can substitute to Light/Non Fat)
    80g Vanilla Flavour Greek Yogurt
    5g Stevia/Sugar (Optional depends on the sweetness of the greek yogurt)
    Strawberries (Optional/ Any fruits of your choice)



    Method For Crepe Batter

    1. Mix KIKU / Matcha powder & milk until fully dissolved, add whey protein powder & baking powder, whisk until fully dissolved. It is recommended to use a hand mixer on this step due to less liquid in this mixture, which is harder to dissolve properly & creates clumpy batter. (I'm using YUKIWA / Matcha Mixer for the whole recipe!)
    2. After getting a smooth batter, add egg, sugar & oil, mix well.
    3. Make sure the batter has no clumps, & the batter is ready to cook!
    4. Repeat the same steps with Vanilla Crepes ingredients.

    Note:
    Keep the batter in the refrigerator for more than 10 minutes before cooking, it creates thicker consistency and helps prevent the crepes from breaking.



    Method To Cook Crepe Layer

    1. Set a 4-inch non-stick frying pan on low heat. Once the pan is hot, brush the oil and remove excess oil with a paper towel (don’t worry, oil is applied thinly). Gently stir the batter right before scooping, (otherwise, the batter will be too thick toward the end). Pour the batter just enough to cover the bottom of the frying pan, about 2tbsp for my pan.
    2. Cook for 20 seconds without touching. By now you’d see the outside edge of the crepe getting a tiny bit crispier. Use a spatula to flip the crepe.
    3. Cook the other side for 5 - 10 seconds. Transfer to a clean surface such as a cutting board and allow the layers to cool to room temperature before stacking them.

    Note:
    - Swirl the pan slowly to make a perfect circle crepe.



    Method To Prepare Frosting

    1. In the bowl with yolk, mix cream cheese, greek yogurt & sugar until smooth & creamy.
    2. Cut fruits in thin slices.


    Method To Assemble

    1. First, place 1 piece of crepe on your working surface. Spread the cream cheese evenly from the middle.
    2. Place another crepe on top and spread cream cheese evenly. You may add the fruits on any layers you preferred.
    3. Continue this process until the last crepe is placed on top.
    4. Refrigerate cake for at least 2 hrs or until frosting has firmed up, it will be much easier to slice after refrigeration and won't slide apart. To serve, dust with more matcha powder or powdered sugar if desired.
