RECIPE
Matcha Glutinous Rice Muffin

Ingredients
160g Glutinous Rice Flour
10g YURI / Matcha Powder
160g Almond Milk (or any other milk)
1 Egg
40g Sugar
40g Vegetable Oil
3g Baking Powder
A pinch of salt
Toppings:
Some chopped chocolate and chocolate chips
OR
Some chopped marshmallow
Method To Assemble
- In a bowl, combine egg, sugar, milk and oil. Mix well.
- Add in glutinous rice flour, YURI / Matcha powder, baking powder and salt. Mix well until the batter becomes smooth.
- Line 6 muffin cups on baking pan. Fill the batter into each muffin cups, about half.
- Place a few pieces of chopped chocolate (or marshmallow) in the middle.
- Fill up the muffin cup with more batter until the chocolate (or marshmallow) is completely covered.
- Sprinkle some chocolate chips (or marshmallow) on top.
- Preheat oven at 180°C and bake for 30 min.
