RECIPE
Matcha-Coated Madeleines

Ingredients
60g Egg
60g Butter
60g Sugar
60g Cake Flour
2g Baking powder
Lemon peel
Coating
80g White chocolate
3g YURI / Matcha powder
Method To Assemble
- Paint madeleines mold with melted butter and put in the fridge for hardening.
- Grind a lemon peel and add in sugar, mix well.
- Get a bigger bowl, mix egg and sugar (step 2), stir well.
- Sift flour and baking powder twice, and add into the mixture, mix until smooth.
- Lastly add in melted butter and mix until shiny and sticky.
- Wrap it with plastic and keep in the fridge for 1 hour.
- Take out the madeleines pan and sprinkle with flour. Filling up batter at 80%, bake at 180°C for 12 - 15mins.
- Melt white chocolate and mix with matcha powder, blend well.
- Put 2 tbsp of white chocolate mixture into madeleines mold, take the Madeleines upside down and press onto the mold, put in the fridge for 30 mins for the coating, and ready to eat!
