White Chocolate Matcha Christmas Cookies

Makes 15 cookies (depending on the size of your cookie cutter!)
Preparation time: 1 hour
Baking time: 15 minutes
Total time: 1 hour 15 minutes
Ingredients
145g AP flour
½ tbsp YURI / Matcha powder
Pinch of baking powder
Pinch of salt
½ tsp cinnamon
85g salted butter
70g coconut sugar
1 small egg or ½ large egg
½ bar white chocolate, melted (for the icing)
Method To Assemble
- Preheat oven to 180°C.
- Mix all the dry ingredients together in a bowl (flour, baking powder, matcha powder, cinnamon, salt).
- Cream the butter and coconut sugar together using an electric whisk, then add in the egg, and whisk until combined.
- Sift in the dry ingredients into the wet ingredients, and mix until a smooth ball of dough forms
- Flour a surface and roll out your dough, then use your cooking cutter to cut out cookies, rolling out the dough and and repeating until all the dough is used up. Depending on the size of your cookie cutter, you should make approximately 15 cookies.
- Place on parchment paper on a baking tray and bake for about 12-14 minutes until the edges are browned
- Let the cookies cook to room temperature, then place in the fridge to chill
- Place your melted white chocolate in a piping bag and pipe the chocolate onto the cold cookies. Place in the fridge until the chocolate has hardened before eating!
