Matcha No Knead Bread

Recipe for 220g+- Bread
Prep time : 5 mins mixing
Rise: max 2 hr
Baking Time: 40mins
Ingredients
130g Bread Flour
3g Instant Dried Yeast
5g Stevia/Sugar
2g Salt
3g Poppy Seeds
10g AJISAI / Matcha Powder
130ml Warm water (50°C or below)
Method To Assemble
- Mix flour, yeast, AJISAI / Matcha Powder, stevia and salt in a large bowl. Add water, then use a spatula to mix until all the flour is incorporated. Dough will be wet and sloppy – not kneadable, but not runny like cake batter.
- RISE: Cover with cling wrap, leave on counter for 2+- hours until it doubles in volume, it’s wobbly like jelly and the top is bubbly. *Current weather is kind of hot in Malaysia, dough can rise in much shorter time, the shortest time I've got was around 1hr 30mins*
- Preheat to 230°C/450°F (220° fan) 20 minutes prior to baking.
- Ready to bake: Sprinkle work surface with some flour, scrape dough out of bowl. Sprinkle the top with some flour as well. Using a dough scraper or spatula, fold the sides inwards for a few times to roughly form a roundish shape. Add some poppy seeds on top of the dough, as much as you like!
- Slide a large piece of parchment paper (not wax paper) next to the dough, then flip the dough upside down onto the paper (seam side down, smooth side up). Slide it towards the middle, then reshape it into a round(ish) shape. (Don't get too hung up about shape. Artisan bread should look rustic & doesn't need to be a perfect shape!)
- Transfer dough on paper to a metal pan. Place on the middle shelf of the preheated oven. Bake for full 40 minutes until it's a deep greenish golden brown. The surface will crack, with extra crispy ridges, looking authentic, just like the Artisan bread from bakeries!
- Cool on rack for 10 minutes before slicing.
Best served with: ANYTHING! The nuttiness taste of the bread can be served in a sweet or savoury dish!
