Matcha Red Bean Pudding with Whipped Cream

Ingredients
5g AJISAI / Matcha Powder
5g Gelatin Powder
2 Tbsp Hot Water
300ml Milk / Soy Milk
50g Sugar
50g Red Bean Paste
Toppings
150ml Whipping Cream (Cold)
15g Sugar
Method To Assemble
- 5g of gelatin powder with 2tbsp hot water, mix and stir to dissolve, set aside.
- Pour milk and sugar in a saucepan over a low heat and stir well.
- Add 1/3 of milk mixture into matcha powder, whisk with Chasen until matcha mixture is completely smooth and silky with no lump.
- Then pour the matcha mixture into milk mixture whisk till smooth and lastly add in gelatin mixture, stir well.
- In a bowl, put red bean paste and pour some of the matcha mixture, combine well, and transfer into serving cups.
- Pour the matcha mixture evenly on top, chill in the refrigerator for 4 hours or until it solid.
- Pour cold whipping cream and sugar in a mixing bowl and whisk on high speed until medium to stiff peak form, transfer to a piping bag and decorate on top of matcha pudding, and lastly sprinkle some matcha powder on top!
