Vegan Genmaicha Pancakes

Recipe makes a stack of 5-6 pancakes
Preparation time: 15 mins

Ingredients
120g flour
2 tsp baking powder
1 1/2 tsp lemon juice
Pinch of salt
2 tsp MOKUREN / Genmaicha powder (more if you like it stronger!)
1 cup plant-based milk
1 tbsp maple syrup (optional)
1 tbsp plant-based butter
Toppings of your choice to garnish: I used cacao nibs, pecans, strawberry compote
Method To Assemble
Whisk the nut milk and lemon juice together and let rest for 5 minutes.
Combine the flour, baking powder, matcha powder and salt and sift into a bowl.
Mix the vegan buttermilk (made from nut milk and lemon juice) with the butter and maple syrup, then add into the flour. Gently fold in with a whisk, careful not to over-mix.
In a pan, melt additional vegan butter, then pour 1/4 cup batter for each pancake slowly. Flip after bubbles form at the top the pancake turns golden brown, and repeat for the other side. When all your pancakes are done, serve stacked with a drizzle of maple syrup and toppings of your choice!
