Matcha Almond Frangipane

Ingredients
Matcha Almond Frangipane
48g of Almond flour
7g All-purpose flour (sieved)
4g YURI / Matcha powder (sieved)
35g Brown sugar
3g Vanilla extract
1 Egg (room temperature)
45g Unsalted butter (softened)
Some orange zest
Pinch of salt
Matcha Syrup
3g YURI / Matcha powder (sieved)
50g Brown sugar
50g Water
Toppings (or your choice of toppings)
Nuts (roughly chopped)
Fresh fruits
Honey / Maple Syrup
Method For Matcha Almond Frangipane
In a blender, blend almond flour, all-purpose flour, matcha powder, brown sugar, vanilla extract, egg, unsalted butter, some orange zest, and a pinch of salt until smooth.
Method For Matcha Syrup
Add matcha powder, brown sugar, and water in a saucepan, bring to boil, stirring occasionally. Remove heat when sugar dissolves completely.
Method To Assemble
- Preheat oven to 200 Celsius.
- Lay out slices of bread on the baking tray with baking paper.
- Brush the matcha syrup on both sides of the bread and spread matcha almond frangipane on the bread. Top with roughly chopped nuts.
- Toast for 10mins or until lightly brown.
- Serve with fresh fruits and honey.
