What do you do for a living?
I’m an Interactive Multimedia Designer who works in a digital marketing agency. I’m passionate in creating visuals on variety of platforms including photography, illustration and 2D animation. I believe that colourful and meaningful artworks will bring joy to viewer’s life!

You've recently started to share your baking creations on your Instagram. Has baking always been a passion of yours?
Baking has always been my passion but I couldn't find a time to do it. Due to Movement Control Order (MCO) in Malaysia during March this year, I finally took the opportunity to start baking. It all started by creating the trendy Dalgona drink using Niko Neko Matcha powder during MCO period. As I really love eating bread, so I asked myself why not try to bake one? From there, I experienced the fun of baking.

What's the most enjoyable part of baking in your experience?
I love baking bread! The process of kneading dough with your own hands is so enjoyable! Even though it’s not easy to knead dough perfectly by hand, it’s so satisfying when I succeed! Besides, what makes baking enjoyable is when my creations look appetizing and visually appealing in the photo.

How did you come up with Aloe-ha, Matcha?
Picture this - you're lying on a Hawaiian beach, the sun warm on your skin, and you're sipping a tall glass of mocktail. Doesn't that sound so refreshing and relaxing? I wanted to bring this experience to life, so I did it through this drink! This fresh, flowery and nutritious goodness is a blend of Gold Kiwi, edible flowers, mint and Matcha. To top it all off, I've also added some Aloe Vera into the recipe - this is inspired by the word 'Aloha', which means love, affection, peace, compassion and mercy in the Hawaiian language.

Why did you choose KIKU / Matcha powder for this recipe?
KIKU / Matcha has this well-rounded, balanced, yet nutty-umami flavour that I've learned to love. It has this clean aftertaste, and I do find to possess the least grassy bitterness in comparison to other Matcha powders. That said, I think it doesn't overpower the Kiwi flavour but elevates it, making this mocktail light yet refreshing.

RECIPE

Aloe-ha, Matcha

Serving:1 glass
Preparation time: 30 mins
Cooking time: 5-10 mins
Total time: 35-40 mins

Ingredients

1 Aloe Vera
1 Gold Kiwi
100ml Water
2tbsp + 1tsp Lakanto Sugar (or any other sugar)
3g KIKU / Matcha powder
100ml Sparkling water
Edible flowers
Mint leaves
Salt
Kiwi (diced for garnishing)


Method To Assemble

  1. Prepare some edible flowers and mint-infused ice cubes the night before.
  2. To prepare the aloe vera, cut off the spiky edges on the top and alongside the plant. Cut aloe vera into smaller rectangular size and soak them in water for 10min to remove debris and latex.
  3. Scoop out the aloe vera jelly from the skin and dice the jelly. Soak them in water for another 10min. Drain the excess water and set aside.
  4. In a pot of boiling water, add 1tbsp of Lakanto sugar, mix until dissolved. Add in aloe vera jelly and let it boil for 5-10min. Remove the aloe vera jelly from the pot and set aside to cool.
  5. To prepare kiwi juice, peel kiwi skin and cut the fruit into cubes. Place them into a blender with 1 tbsp of Lakanto sugar and 50ml of water. Blend until smooth. Sieve the kiwi juice and set aside.
  6. Whisk together 50ml water, 1tsp of Lakanto Sugar and sifted KIKU Matcha with YUKIWA / Matcha Hand Mixer until smooth.
  7. Salt the rim of the Niko Neko / Glass Cup Ver. 01.
  8. Add in edible flowers and mint ice cubes. Pour kiwi juice. Add in some mint leaves. Pour Sparkling Water. Then, gently pour in the Matcha mixture.
  9. Add Aloe vera jelly, diced kiwi and mint leaves as a finishing touch.
