I’m an Interactive Multimedia Designer who works in a digital marketing agency. I’m passionate in creating visuals on variety of platforms including photography, illustration and 2D animation. I believe that colourful and meaningful artworks will bring joy to viewer’s life!

You've recently started to share your baking creations on your Instagram. Has baking always been a passion of yours?
Baking has always been my passion but I couldn't find a time to do it. Due to Movement Control Order (MCO) in Malaysia during March this year, I finally took the opportunity to start baking. It all started by creating the trendy Dalgona drink using Niko Neko Matcha powder during MCO period. As I really love eating bread, so I asked myself why not try to bake one? From there, I experienced the fun of baking.

What's the most enjoyable part of baking in your experience?
I love baking bread! The process of kneading dough with your own hands is so enjoyable! Even though it’s not easy to knead dough perfectly by hand, it’s so satisfying when I succeed! Besides, what makes baking enjoyable is when my creations look appetizing and visually appealing in the photo.

How did you come up with Genmaicha Tau Fu Fa?
Tau Fu Fa (soybean pudding) has always been one of my favourite desserts growing up! To make a bowl of delicious Tau Fu Fa from scratch is a very difficult and time-consuming process. I came across a very simple Tau Fu Fa recipe online which could be done within a half-hour, how amazing! I decided to modify it with MOKUREN / Genmaicha and enhance the flavour with TSUBAKI / Houjicha Taro Balls!

Why did you choose MOKUREN / Genmaicha powder and TSUBAKI / Houjicha powder for this recipe?

Tau Fu Fah has a natural soybean flavour; I figured adding MOKUREN / Gemaicha to have a layered flavour effect in a single bowl! The combination of roasted brown rice, lingering Matcha aftertaste, soybean and ginger syrup is truly an experience on its own.

I used TSUBAKI / Houjicha powder for the taro balls to further enhance the overall flavour and experience. When you bite into the taro balls, you'll be welcomed with this fascinating toasted hazelnut flavour and rich smoky fragrance that explodes in your mouth!

RECIPE

Genmaicha Tau Fu Fa

Serving: 5 to 6 bowls
Preparation time: 10 mins
Cooking time: 15 mins
Total time: 25 mins

 

Ingredients

4 cups Unsweetened Soybean Milk
1 tbsp MOKUREN / Genmaicha powder
1 tbsp Agar-agar Powder
½ cup Water
2 tsp Vanilla Extract

Syrup
¾ cup Water
½ cup Organic Brown Sugar
1 inch Ginger (mashed)

Houjicha Taro Balls
35g Tapioca Flour
5g TSUBAKI / Houjicha powder
25ml to 30ml Boiling Hot Water


Method To Assemble

  1. In a pot under medium heat, warm up the soybean milk. Scoop ½ cup of soybean milk into a small bowl, add in MOKUREN / Genmaicha powder and whisk until there’s no trace of lumps with ASAGAO/Chasen Bamboo Whisk. Pour back into the pot and mix well.
  2. In another pot, bring ½ cup of water to a boil. Add in the agar-agar powder and stir until fully dissolved. Pour in warm the soy milk mixture and add in vanilla extract. Mix until combined.
  3. Turn the heat off when the mixture comes to a boil. Sift the mixture into a pot with a lid.
  4. Wrap the lid with a clean kitchen towel and cover the pot.
  5. Place the pot into the fridge and chill for 2 hours when the mixture slightly cools.
  6. While waiting for the Genmaicha Tau Fu Fa to set, prepare the syrup by placing water, organic brown sugar and mashed ginger into a small pan. Cook over medium heat and stir until sugar is fully dissolved. Turn off the heat, remove the ginger and set it aside.
  7. To prepare the Houjicha taro balls, mix the tapioca flour with TSUBAKI / Houjicha powder. Create a dough by adding boiling hot water to the flour mixture. It is essential that the water is boiling in order to form the right dough consistency. Add more tapioca flour if the dough is too sticky.
  8. Shape the dough into a long, thin log and cut it into smaller pieces. Dust some tapioca flour to avoid them from sticking together.
  9. In a small pot of boiling water, gently lower the dough balls in. Add 2 tablespoons of cold water when taro balls float. Then cook for another 2-3 minutes. Put the cooked taro balls into a bowl of cold water and set them aside.
  10. To serve, gently cut the Genmaicha Tau Fu Fa into thin slices with a flat spatula into a small bowl. Add a few Houjicha taro balls with 2 to 3 tbsp of syrup.
