Matcha Almond Crisps

Makes 45 pcs (with 28cm x 28cm baking tray)

Ingredients
40g Egg White
30g Whipping Cream
15g Cake Flour
4g AJISAI / Matcha Powder
1g Salt
40g Icing Sugar
40g Butter
150g Almond Flake
Method To Assemble
- Melt butter over simmering water, set aside.
- In a large bowl, beat egg white and whipping cream until frothy.
- Mix sifted cake flour and matcha powder until smooth.
- Mix in icing sugar, salt and melted butter and continue mixing.
- Lastly add in almond flakes, use a spatula to mix gently and carefully.
- Prepare a square baking tray with baking paper, spread out the mixture into a very thin layer evenly.
- Bake in a preheated oven for 15 minutes at 150C.
- Cut into square sizes and bake for another 15 mins at 140C until the edges turn brown.
