Healthy Matcha Oatmeal Waffles

Ingredients
Matcha Oatmeal Waffles
½ cup of Greek yogurt
½ cup of milk (can be replace with any milk of your choice)
1 ½ cup of ground oats or oat flour
1 tbsp cornstarch
5g AJISAI / Matcha powder
2 tbsp monk fruit sweetener (can be replace with any sweetener of your choice)
1 whole egg
2 tsp baking powder
Matcha Sauce
3 tbsp hot water
1 tsp AJISAI / Matcha powder
1 tbsp monk fruit sweetener (can be replace with any sweetener of your choice)
1 tsp of cornstarch
Method For Matcha Sauce
- Sift the matcha powder using a drainer for fine matcha powder.
- Add in sweetener and hot water; make sure the matcha powder and sweetener dissolve in the hot water and no lumps.
- Get a saucepan and cook the matcha sauce in medium low heat.
- Add in cornstarch and cook until it's slightly thickened.
- Set aside and let it cool.
Method For Waffles
- Add all the ingredients into a blender.
- Blend until smooth to a thick consistency, set aside and let it rest for 10 minutes.
- While the batter is resting, preheat the waffle maker and grease with some coconut oil or butter.
- Pour the batter on the hot waffle maker, cook for 3 – 4 minutes or until golden crust is formed.
- Let it cool on a wire rack for 3 – 5 minutes, then serve it with your favourite topping, drizzle the matcha sauce and enjoy!
