Matcha Christmas Wreath Bread

Ingredients
10g AJISAI / Matcha Powder
250g Bread Flour
120ml lukewarm milk
1 whole egg
26g caster sugar
3g dry yeast
28g soft unsalted butter
Filling
30g soft unsalted butter
20g icing sugar
1 whole egg
50g coconut flakes
20g dry cranberries
Method To Assemble
- In a bowl, add in sugar, lukewarm milk and dry yeast, stir it and let it rest for 10-15 minutes to active the yeast.
- In a stand mixer bowl, add in bread flour, egg and the active yeast. Start kneading with low speed until all ingredient combine together. Change to medium speed and knead for 10-15 minutes.
- Add in unsalted butter and continue to knead for 5-6 minutes. The dough should turn out very soft and slightly sticky.
- Place the dough in a clean bowl, cover up with lid or plastic wrap and set aside in a warm place. Let the dough rise for about an hour or until doubles in size.
- While the dough is rising, let’s make the filling. Combine all the filling ingredients and mix well.
- Meanwhile, the dough has doubled in size and very airy. We need to deflate it and expel the gases.
- Transfer the dough onto the work surface, roll the dough into a rectangle, spread the filling over the entire surface of the dough. Make sure to smooth it evenly.
- Starting on the long end, roll the dough up tightly. Seal the dough by pinching the edge against the roll.
- Next, cut the roll in half lengthwise. Then loosely twist the halves around each other, keeping the cut side up.
- Shape the bread rope into a wreath and pinch the end together to seal.
- Transfer the bread onto a baking tray covered with parchment paper.
- Preheat the oven at 180°C. Bake the bread wreath at 180°C for 20 minutes.
- When the bread wreath is done, cool them and enjoy!
