Matcha Cranberry Almond Biscotti

Ingredients
8g REN / Matcha powder
265g All-purpose flour
125ml Vegetable oil
120g Caster sugar
2 tsp baking powder
½ tsp Salt
2 Whole eggs
120g Raw almonds
65g Dried cranberries
Egg wash
Method To Assemble
- Preheat the oven to 160 degrees.
- In a large bowl, whisk the sugar, vegetable oil and eggs together. Add in almonds and dried cranberries and mix well.
- Next, sift the flour, REN / Matcha powder, salt and baking powder in a separate bowl. Add this to the wet mixture and stir until fully incorporated.
- Shape the dough into two logs, place on a baking tray, brush the top with egg wash and bake for 30 minutes at 160 degrees.
- Cool the log on the tray a little but still warm to touch.
- Using a serrated knife, slice the log into cookies 1.5cm – 2cm. Placed the cut cookies on the tray and put them back into the oven to bake for about 20 minutes or until golden brown at 160 degrees.
