Matcha Cranberry Cream Cheese Soft Bagel

Recipe makes 6 servings.

Ingredients
Matcha Soft Bagel
255g Bread flour
15g Honey
143g Iced Water
4g Yeast
10g Soften Butter
5g AJISAI / Matcha Powder
Filling
Cream Cheese
Cranberries
Method To Assemble
- Sift the flour in a bowl.
- Add in all ingredients including the soften butter, mix using a mixer with dough hook low speed 2 minutes and medium speed at 5 minutes. (You can also mix with hand if you don’t have a mixer at home) Mix until all ingredients and knead the dough until smooth. This takes about 10 minutes.
- Place the dough into an ungreased bowl, cover and let it sit at room temperature for 30 minutes.
- Divide the dough into 6 equal pieces, shape each dough into a ball and let it rest for 10 minutes.
- Roll the dough flat about 10cm wide, stuff the cream cheese and cranberry then roll the dough into a long strip about 15 cm. Make sure the filling is tightly wrapped with the dough. Lastly, make a round shape with long strip dough, tightly pinch both tail ends together so it doesn’t come apart when boiled.
- Cover the stuff bagels and let it sit at room temperature for 50 – 60 minutes.
- Fill a pot with 3 liters water and set on medium heat and bring it to boil.
- Drop the bagel and cook each side 30 seconds. Remember to cook the bagel one by one.
- Remove the boiled bagels from the water and let it drip before placing it on the baking sheet.
- Preheat your oven at 170C while boiling the bagels.
- Baked your bagel at 170C for 10 – 15 minutes.
- Remove the bagels from the oven and place on the cooling rack for 10 minutes. Then Enjoy!
