RECIPE
Matcha Cream Cheese Cookies

Ingredients
10g YURI / Matcha powder
180g Cream cheese
30g Icing sugar
100g Butter
60g Caster Sugar
1 Egg
160g All purposed flour
1g Baking soda
A pinch of salt
Method To Assemble
- In a bowl, sift in icing sugar and soften cream cheese. Mix until well combined, then chill in the freezer.
- In another bowl, combine all-purpose flour, YURI / Matcha powder, baking soda and salt. whisk the dry ingredients and set them aside.
- Cream the butter and sugar in an electric hand mixer until light and fluffy. Beat an egg in after that and mix until well combined.
- Add in the dry ingredients, then mix until it forms into a dough.
- Divide the cookie dough into 8 equal portions at around 45g each, and place on a parchment sheet.
- Take the cream cheese filling out of the freezer, and divide it into 8 equal portions, at 20g to 25g each. Roll them into balls.
- Place each cream cheese ball into the centre of the cookie dough and wrap it around nicely. Bake the cookies at 180c at 20 mins until the edges turn golden brown.
- Transfer to a wire rack to cool, then serve!
