Matcha Fortune Cookie

Recipe makes 20-30 cookies
Ingredients
90g Egg Whites, room temperature
90g Caster Sugar
60g Butter, melted
1 tsp Vanilla Essence
60g Water
100g Plain Flour (for matcha flavour : 5g AJISAI / Matcha powder, 95g plain flour)
1 pinch of fine salt
Method To Assemble
- Write an individual message on each piece of paper and set aside.
- Whisk egg whites and sugar until frothy, then add in melted butter, vanilla essence and water, mix until incorporated.
- Sift in the flour and salt, mix well and using spatula gently fold until smooth
- Place 1 tablespoon of batter on 1 of the prepared baking trays (with parchment paper or silicone mat), and use the back of spoon to spread it into a circle at approx 9-10cm diameter. Don’t make more than 3 at a time as they set very quickly.
- Bake 8-10mins, 180C until the edges of each cookie turn golden brown.
- Remove from the oven, using a palette knife gently remove cookie from tray and turn it upside down. Place your message note in the middle of cookie and fold into half to a semicircle. Pick up the cookie and place the straight edge over the lid of a cup and gently bend down both sides to form a crescent-look.
- Place the fortune cookie into muffin tray to help shape as it cools. Repeat the remaining batter until finish.
- Allow cookies to cool and store in a tight container, or seal it in individual plastic and wrap it nicely as a gift. (Melt chocolate / sugar frosting to decorate fortune cookie at your preference).
