Matcha Four-Leaf Clover Pastry

Recipe makes 12 pieces pastry
Ingredients
Dough A (Water oil dough)
150g All purpose flour
20g Sugar
50g Unsalted butter
60g Water
Dough B (Shortening dough)
120g Cake flour
60g Shortening
3g AJISAI / Matcha powder
Filling
80g Shredded coconut
50g Unsalted butter, melted
50g Icing sugar
20g Milk powder
5g AJISAI / Matcha powder
1 Egg
Method to Assemble
- To prepare Dough A, sift the flour thoroughly, making sure there are no clumps. Add in sugar and unsalted butter and mix well, then slowly drizzle in water and mix until forms a smooth dough. Cover the dough with plastic wrap and let rest for 30 minutes.
- To prepare Dough B, sift the flour thoroughly, making sure there are no clumps. Add in the shortening and mix well then shape the dough into a square. Cover the dough with plastic wrap until ready to use.
- For the filling, mix in shredded coconuts, icing sugar, milk powder and AJISAI / Matcha powder well in a bowl. Add in melted butter and the egg. Mix well to combine until it forms into a dough. Form the dough into small balls, each weighing at 20g. Cover it with plastic wrap and place in refrigerator until ready to use.
- For the pastry crust, divide both Dough A and Dough B into 12 equal pieces. Form into small balls and cover with plastic wrap to prevent it from getting dry.
- Take a portion of Dough A, press it down to flatten and place Dough B on top , wrapping it with the flattened dough. Repeat with rest of the dough balls and always cover them in plastic wrap.
- using a rolling pin, flatten the dough ball until it becomes long. Roll up the flatten-shaped dough with your hand. Repeat until all 12 pieces are done. Cover with plastic wrap and let rest for 20 minutes.
- To wrap the filling in, take one dough and press the center with your fingers or a chopstick until both sides fold together. Press it flat and roll into a dumpling -wrapper shape.
- place filling onto the center, wrapping tightly.
- gently press the dough with filling into a flat shape. Mark the center of the dough with a round shape object, you can use a piping tip.
- Cut the dough into 8 equal parts from the marked center. After cutting, the dough will look like an 8 petaled flower.
- Twist two pieces of the petals to each other to the opposite direction. It will forma heart-like shape and there you have it, a four leaf clover!
- preheat the oven to 180 degrees and bake for 20 minutes. Let cool and enjoy!
