Matcha Ondeh-Ondeh

Recipe makes 15-16 balls

Ingredients
50g Coconut flakes (grated/desiccated*)
80g Glutinous rice flour
8g AJISAI / Matcha powder (sieved)
35g Sugar
60g Coconut milk
1 tbsp Water
Gula Melaka Syrup
35g Gula Melaka (cut into small cubes)
Method For Matcha Ondeh-Ondeh
- In a bowl, combine glutinous rice flour, matcha powder and sugar.
- Combine coconut milk with the dry ingredients and mix well until a smooth and elastic dough forms. Add a bit of water if the dough is dry.
- Dust some flour on the countertop to prevent the dough from sticking.
- Divide the dough into equal-sized mini balls - you should make about 15-16 balls.
- Flatten the mini balls, place Gula Melaka cubes in the center and wrap into a smooth ball. Make sure to seal well to prevent the Gula Melaka from leaking during the cooking process. Repeat the same with the rest.
Method To Assemble
- Prepare a pot of boiling water. Steam freshly grated coconut for 15-20 mins. Set aside.
- Cook the mini balls in boiling water for 6-8 min until they float to the surface. Cook 5-6 pieces at a time.
- Remove mini balls with a sieve or slotted spoon and shake off the excess water.
- Roll mini balls with coconut flakes.
* For desiccated coconut, add a little water into it before steaming.
