minahmacchiato is a home cafe on instagram that started off as experimenting new drinks inspired by the intricate café menus at Seoul, Korea. Picking up this newfound hobby during the quarantine, she encourages her viewers to have fun with colourful ingredients in their drinks. Her home café style videos are bubbly and stress relieving, ranging from iced lattes, refreshing teas, and fruity mixtures.

How did you get started on creating your home cafe on Instagram?
I’ve always followed Korean home-cafe accounts on Instagram and YouTube, which have been a source of stress relief during my hectic university days. But what made it into a reality was when I got back from Seoul and quarantine had started shortly a few weeks later. Just like everyone else with much time on my hands, I ended up making my own home cafe account named minahmacchiato! Most of the inspiration I got was from my trip to Seoul, the cafes were amazing and recreating some drinks I had there became my goal.

Any tips to share with your viewers on filming aesthetic drink recipes?
Personally, to me, good lighting and backdrop/deco is all you need. It’s a shock to some people that I use my IPhone XR to record and edit the whole video cause I do not have the energy and time to use a laptop for it but I admire others who do!

Personal tips for your recipe viewers when working with Matcha recipes.
Matcha can be intimidating to some cause with the wrong ratio of ingredients it might be too bitter or too sweet. Some may have their own preference on how they like their matcha, so I definitely advise to do a trial and error till you get the right taste of it!

How did you come up with Matcha Passionfruit Mocktail?
My mom recently bought a jar of passionfruit paste - I've grown to love making drinks out of it! It's so refreshing and is definitely a great way to beat the heat and humidity. That said, I had to try infusing Matcha into it. I haven't stopped drinking this mocktail since; the sourness of the passionfruit oddly pairs so well with the delicate flavours of Matcha.

Why did you choose AJISAI / Matcha powder for this recipe?
AJISAI / Matcha has a relatively bright and slight pistachio nuttiness flavour which I find goes hand in hand with most of my recipes! It really is an all rounder - not too overpowering, not too mild. It never ceases to disappoint me.

What do you do for a living?

I’m an Interactive Multimedia Designer who works in a digital marketing agency. I’m passionate in creating visuals on variety of platforms including photography, illustration and 2D animation. I believe that colourful and meaningful artworks will bring joy to viewer’s life!

What's the most enjoyable part of baking in your experience?

Baking has always been my passion but I couldn't find a time to do it. Due to Movement Control Order (MCO) in Malaysia during March this year, I finally took the opportunity to start baking. It all started by creating the trendy Dalgona drink using Niko Neko Matcha powder during MCO period. As I really love eating bread, so I asked myself why not try to bake one? From there, I experienced the fun of baking.

Why did you choose AJISAI / Matcha powder for this recipe?

AJISAI / Matcha has this well-rounded, balanced, yet nutty-umami flavour that I've learned to love. It has this clean aftertaste, and I do find to possess the least grassy bitterness in comparison to other Matcha powders. That said, I think it doesn't overpower the Kiwi flavour but elevates it, making this mocktail light yet refreshing.


RECIPE

Matcha Passionfruit Mocktail

Serving: 1 glass
Preparation time: 10 mins

Ingredients

3 tsp AJISAI / Matcha powder
2 tsp Sugar
20ml Cold water
2 tsp Passionfruit paste
100ml Ice cream soda (preferred carbonated drink)


Method To Assemble

  1. Combine AJISAI / Matcha powder with some cold water and your choice of sweetener. Proceed to whisk the mixture with ASAGAO / Chasen Bamboo Whisk until thick and frothy, revealing no clumps.
  2. In a glass cup, place the passionfruit paste, ice and ice cream soda.
  3. Finish off my pouring the thickened Matcha paste on top and serve it chilled!
