Tell us about @jw.works - what is this Instagram account is about?

I started jw.works as a place to share nice photos I had the opportunity to stumble upon — usually photos about interior, cafes & food. Basically anything that caught my attention. I'd also use the account to showcase some of my own works covering graphics works, food styling, calligraphy, photography and my recent interest — baking. I hope to be able to deliver my stories and message through my works.

I started jw.works as a place to share nice photos I had the opportunity to stumble upon — usually photos about interior, cafes & food. Basically anything that caught my attention. I'd also use the account to showcase some of my own works covering graphics works, food styling, calligraphy, photography and my recent interest — baking. I hope that I would be able to deliver my stories and message through my works.

How did you get into baking despite being a full time professional graphic designer?

I got into the baking trend during the MCO period. The shift to work-from-home, time became flexible thus making it easier to do things that I'm passionate about. I mostly spend the weekends tinkering with baking pastry & making dessert so juggle between work and kitchen fun during this period is pretty much manageable.

Where do you get your inspiration for your recipes?

My inspiration usually comes from desserts that I've tasted myself from different parts of the world, as well as those that I came across over IG and YouTube. I like to decorate my work nicely, as such, I do a lot of research online, which in turn also gives me inspiration for my next project!

How did you come up with Matcha Red Bean Mochi Bun recipe?

I love the combination of matcha and red bean very much! This matcha bun is filled with sweet red bean paste and chewy mochi, is fluffy, sweet and flavourful, good for any time of the day!

AJISAI / Matcha powder has a more rich umami-ness which can taste the slightly bitterness in each matcha bun.

RECIPE

Matcha Red Bean Mochi Bun

Recipe makes 12 pieces , serves 4-6 pax

Prep Time: 20mins
Cooking Time: 1 hour
Proofing Time : 2 hours

Ingredients

Mochi Fillings
75g Glutinous rice flour 
20g Corn flour 
14g Caster sugar 
145g Milk 
10g Melted butter

Matcha Bun
1tsp Yeast
30g Granulated sugar 
200g Milk
290g Bread Flour
8g AJISAI / Matcha or YURI / Matcha Powder 
1/4 tsp Salt
30g Butter
20g each (x12) Red Bean Paste

*Recipe uses Thermomix.



Method For Mochi Fillings

  1. Put all ingredients into Thermomix mixing bowl to combine, set 20 sec / speed 3 to 6.
  2. Transfer to a bowl and steam for 20mins or use Thermomix and set Varoma / 15 mins / speed 2.
  3. When it’s done, take out the mochi and add in melted butter, stir well completely and set aside to let it cool.
  4. Divide into 20g each for 12pcs.


Method To Assemble

  1. Place milk, sugar and yeast into Thermomix mixing bowl, set 2 minutes / 37C / speed 1.
  2. Add in bread flour, matcha powder and salt, set kneading method for 2 minutes.
  3. After 2 minutes, add in butter and set kneading method for 3 minutes.
  4. Take out the dough, make it round and transfer to a bigger bowl, covered and let it rise in a warm place for an hour.
  5. Once the dough is finished proofing, divide it into 12 pieces equally and let it rest for another 10 mins.
  6. Roll out each dough into a thin circle, add mochi and red bean paste to the center and wrap it nicely, seam side down and place on baking paper, continue to the rest of 11 pieces.
  7. Once it's done, let it proof for another 50 mins in a warm place.
  8. After 50 mins proofing, decorate with some sesame on top, cover with a sheet of baking paper and place another baking tray on top of the bun ( to have a slightly flat kind of bun)
  9. Send to preheated oven and bake for 25mins at 180C.
