Dark Chocolate Filled Matcha Tarts

Makes 12 - 15 mini tarts
Ingredients
Tart crust:
3 tsp YURI / Matcha powder
75 g unsalted butter, softened
1 tbsp sugar
1 egg yolk
1 tsp vanilla extract
1 cup AP flour
Chopped hazelnuts/pistachios to garnish
Filling:
200g chopped dark chocolate
228g heavy cream
Method To Assemble
Grease a muffin tray with butter or olive oil.
Mix butter and sugar in a bowl, then add in the yolk and vanilla extract. Add the matcha powder and flour and knead until a smooth dough forms. Wrap with cling film and chill for 30 minutes to an hour in the fridge.
Roll out using a rolling pin and using a tart ring or using a knife, cut out circles to fit the muffin tin. Press the dough evenly into the muffin tin until all the dough is used up.
Using a fork, create holes in the base so air can escape during baking, then place in the freezer while you preheat your oven to 170°C.
Bake for 12 - 15 minutes or until golden brown. Let cool before removing, and store in the fridge while you make your filling.
To make the filling, heat heavy cream in a pan on medium low until warm without boiling, then pour the cream over the chocolate in a separate bowl. Mix to combine until the chocolate is melted, then pour into the tart shells.
Top with the hazelnuts and pistachios, then let chill in the fridge for an hour or until set.
