Matcha Adzuki Bean Cake

250 g Butter (SCS)
380 g Castor Sugar
3 Eggs (A)
1 tsp Vanilla Essence
Ingredients B – (Sieve)
360 g Superfine Flour/ Cake Flour
1 tbsp baking powder
4 tsp Niko Neko YURI / Matcha powder

360 g Fresh Milk (Dutch Lady)

35 g Nestum/Cornflakes (Rough Mix)

250 g Butter (SCS)
380 g Castor Sugar

1 tsp Vanilla Essence
Ingredients B – (Sieve)
360 g Superfine Flour/ Cake Flour
1 tbsp baking powder
4 tsp Niko Neko YURI / Matcha powder
Ingredient C
360 g Fresh Milk (Dutch Lady)
Ingredient D
35 g Nestum/Cornflakes (Rough Mix)
Cream Cheese Frosting
350 g non-dairy whipping cream (I use Rich non-dairy whipping cream)
500 g cream cheese
2 tsp vanilla essence
2 – 3 tbsp dairy whipping cream (Anchor brand)
2 tsp Niko Neko YURI / Matcha a powder (feel free to add more)
Tips
- Preheat oven for 20 minutes before placing tray inside the oven.
- Kindly ensure that all ingredients are at room temperature.
- Oven Temperature – use the usual temperature for baking cake and adjust accordingly if necessary.
Method For Cake
- Beat butter and sugar until light and fluffy. Make sure to scrape the mixing bowl for a few times.
- Add vanilla essence and half of the eggs. Keep scraping the mixing bowl and add in the rest of the eggs. Keep scraping.
- Increase the speed of the mixer to medium and mix until just incorporated. If the batter is not mixed properly, add 1 scoop of flour and mix at medium speed. Batter should be nice and smooth. Scrape the mixing bowl.
- At low speed, add ingredients B & C alternately. Do not mix for too long, just nice until there is no more flour presence visually. (It’s okay if the batter if lumpy, you can mix by hand later on)
- Once everything is mixed properly, add in ingredients D. Mix until incorporated and pour the batter into the prepared pan with tracing paper and grease.
Method For Cream Cheese Frosting
- Whisk non-dairy whipping cream until solid and take it out of the mixer.
- Add cream cheese into the mixer and by using paddle beat the mixture until it becomes smooth. Add Niko Neko YURI / Matcha powder and keep beating.
- Add the whisked whipping cream and continue beating until it becomes smooth and well-mixed.
- Add in vanilla essence and beat until it becomes nice, smooth and silky.
- Add dairy whipping cream and keep beating until smooth.
