Matcha Chocolate Chip Mug Cake

Ingredients
DRY
4 tbsp all-purpose or whole-grain flour
1 tsp KIKU / Matcha powder
1/4 tsp baking powder
1 tbsp lakanto monkfruit sweetener (or other unrefined dry sweetener)
WET
3 tbsp almond milk
1 tsp coconut oil
Dash of vanilla extract (optional)
ADD-INS
1 1/2 tbsp chocolate chips
Method To Assemble
- Mix dry ingredients in a microwave-safe mug and set aside.
- Whisk wet ingredients together then fold in with dry ingredients until well combined, being careful not to over-mix.
- Microwave on high for approximately 2 minutes (or less, depending on watt power).
- Allow to cool for 5 - 10 minutes.
- Serve with your favorite toppings and dig in! In picture: vanilla yogurt and granola.
