Matcha Kinton Tsuri

Recipe for 2 servings
Prep time :10mins steam potato; 20mins cool down time, 10mins +- for mixing all ingredients
Assemble time: 10-20mins with decorating the 'trees'
Total time: 50-60 minutes
Ingredients
50 mL Milk (Dairy / Plant base) (40+10)
10g Stevia/Sugar
5g KIKU / Matcha powder or YURI / Matcha powder
Base: Any Round Cookies/ Biscuits with 4cm+- diameter -
Decoration: Edible sugar pearls & sprinkles
Method For Matcha Potato Puree
- Clean & removed sweet potato skin, cut into small cube & steam for around 10mins. Let it cool for around 20mins before proceed to the next step (This step can be done earlier or a day before).
- Combine sweet potato, milk (40ml), stevia using a food processor, blend until smooth without any potato chunks left.
- Take out half of the potato puree, set aside. Add matcha powder & 10ml of milk to the puree in the food processor. Blend again until fully combined. The puree texture should be a thick-like paste, firm & gooey, which is able to hold its shape.
Method To Assemble
- Time to assemble the TREE. Prepare half of the potato puree on a biscuit base. Shape it into a 3cm wide cone shape using a spatula. Make sure it's in the center of the biscuit. If the puree is too sticky, you may keep in the fridge for a few minutes, let it set firmer before applying the Matcha Potato Puree on top. Same steps for the 2nd TREE.
- Fill Matcha Potato Puree into a piping bag with star shape piping tips. pipe the puree on the pure potato puree cone, into the shape of Christmas Tree. Same steps for the 2nd TREE. (In case you don't have a piping bag, no worries! Just spread around 0.5cm thick of Matcha potato puree on the potato puree cone, using tooth pick to carve it into your desire Christmas Tree shapes! Both of my TREES were done with both methods!).
- Now, it's time for decoration! just HANG the sugar sprinkles & pearls on the tree, the decoration is up to you now!
