Matcha Protein Pancake Cereal

Preparation time: 15 minutes
Ingredients
1 large egg
70 - 80 ml almond milk (unsweetened)
2 tsp coconut oil
1/2 tsp vanilla extract
1-2 tbsp almond meal (leftover from my vegan panna cotta recipe)
2 tbsp Monk fruit sweetener (or any sweetener of your choice)
1 scoop (25g) Soluxe Matcha Protein Powder
2 tsp YURI / Matcha powder
1 tsp baking powder
1 tsp apple cider vinegar
Cooking oil/spray (to sear pancake)
Method To Assemble
- Add all ingredients to a blender, drizzle apple cider vinegar over baking powder as an activation at last.
- Blend till smooth to a thick batter consistency, add more almond milk or water if needed. (You can mix it manually by hand if you prefer) Pour pancake batter into a long-neck squeeze bottle.
- Heat up a pan with medium-low heat, drizzle some cooking oil or use cooking spray.
- Squeeze out pancake batter into mini round shape in the pan. Cover the pan lid and let it cook through for about 40 seconds. The pancake top should be smooth and not too moist before flipping.
- Use a spatula gently flip and toss pancakes. Remove from heat.
- Serve immediately with grass-fed butter, coconut flakes or any topping of your choice.
