Matcha Quinoa Pistachio Energy Bars

Makes 8 energy bars
Ingredients
4 dates, soaked in hot water for 10 minutes
60g quinoa
50g oats
1tbsp chia seeds
1/2 tsp salt
1-2 tsp YURI / Matcha Powder
1 tbsp coconut oil
2 tbsp cashew butter
75g mixture of cashews, pistachios and pumpkin seeds, chopped
Method To Assemble
- Roast quinoa and oats in the oven at 190°C for 10 - 15 minutes, until the quinoa is crispy. Remove and set aside.
- Remove pits from soaked dates and transfer the dates to a food processor, along with 60ml soaking liquid. Add salt and chia seeds and blend.
- Add the blend mixture to a bowl with YURI / Matcha powder, coconut oil, oats, quinoa, mixture of nuts and cashew butter. Mix thoroughly to combine using a spatula or your hands!
- Transfer into a tray or container of your liking lined with cling film and press down to flatten with cling film on top. Refrigerate until set (1 - 2 hours).
- Remove and slice into 8 even bars!
