RECIPE
No-Bake Matcha Cheesecake

Ingredients
80g digestive biscuits
40g melted butter
225g cream cheese
60g sugar
250ml whipping cream
9g gelatin powder + 70ml cold water, set aside
5g YURI / Matcha powder + 70ml hot water, whisk until dissolved
Method To Assemble
- Grind digestive biscuits into fine powder, add in melted butter, blend well and pour into a 6-inch pan, press firmly to form a base layer, chill in the refrigerator.
- Cold water + gelatin powder, whisk until fully dissolved set aside.
- Add matcha powder + hot water, bamboo whisk till smooth and no lumps.
- Whisk cream cheese and sugar until well combined.
- In another bowl, whisk whipping cream till soft peaks are formed and add matcha mixture, and gelatin into the mixture, blend well until it smooth.
- Add cream cheese, gently fold in and stir well until smooth and even
- Pour the batter on top of the biscuit base, gently shake to even out and chill in the refrigerator overnight for 8 hours.
- Decorate it by dusting matcha powder generously.
