Nutty Matcha Energy Bars with Dark Chocolate Drizzle

Ingredients
Matcha filling:
1/2 cup almond milk
1 cup raw cashews
1 tbsp KIKU / Matcha powder
1/4 cup honey
Crust:
1/2 cup roasted almonds
3/4 cup of pitted dates or raisins
1 tbsp coconut oil
pinch of salt
Dark chocolate drizzle:
2 tbsp dark chocolate bar (or dark chocolate chips)
Coconut oil / water
Method For Matcha Energy Bar
- Soak 1 cup of raw cashews in warm water and set aside, then begin preparing crust layer.
- In a food processor, pulse and blend all of the crust ingredients until a sticky consistency is formed. Note: Using a high-speed blender to create the matcha filling will give you a smoother and creamier result, otherwise, a food processor will work well to combine the ingredients into a more textured filling.
- Press crust mixture into a 6x6 pan lined with parchment paper.
- Chill in the freezer for at least 20 minutes while moving on to prepare filling.
- Combine all of the filling ingredients and blend until smooth.
- Pour and spread matcha filling over chilled crust in an even layer.
- Chill in refrigerator (not the freezer!) for at least 4-6 hours, or overnight for best results.
Method For Dark Chocolate Drizzle
Melt about 2 tbsp of a dark chocolate bar (or dark chocolate chips) with some coconut oil or water in a microwave.
Method To Assemble
To serve, drizzle melted dark chocolate and chill in the freezer for 5 minutes before cutting into individual serving bars. In picture: dark chocolate drizzle and cacao nibs.
