Vegan Matcha Chocolate Marble Cookies

Makes 16 cookies
Ingredients
120g (1/2 cup) vegan butter
150g (3/4 cup) sugar
1/2 tsp salt
1 flax egg (mix 1 tbsp ground flaxseeds with 3 tbsp water, then let sit in the fridge for 15 minutes to thicken)
1 tsp vanilla extract
1 1/2 cup AP flour
2 tsp YURI / Matcha powder
2 - 3 tbsp cacao powder
1/2 tsp baking soda
1/2 cup vegan dark chocolate chips
Method To Assemble
- Add vegan butter, sugar and salt to a bowl and cream together with a mixer.
- Add flax egg and vanilla and mix until just combined.
- Mix the flour and baking soda and add to the wet ingredients.
- Split the batter into two and add YURI / Matcha powder to one batch and cacao powder to the other batch. Mix to combine.
- Add the dark chocolate chips to each batter and fold in.
- Chill your batter in the fridge for 30 minutes. Meanwhile, preheat your oven to 175°C and line a baking sheet with parchment paper.
- Form 16 cookie dough balls (half matcha and half chocolate).
- Bake for 12 - 14 minutes, until the cookies are starting to turn golden.
- Remove from the oven and let cool before eating!!
