White Chocolate Chunk Houjicha Cookies

Makes 10 Houjicha Cookies
Ingredients
60g butter
75g sugar
1/4 tsp salt
1 small egg or 1/2 large egg
1/2 tsp vanilla extract
3/4 cup AP flour
1-2 tsp TSUBAKI / Houjicha powder
1/4 tsp baking soda
1/4 cup white chocolate chunks
Method To Assemble
- Preheat the oven to 180°C and line a baking tray with parchment paper.
- Cream the butter, sugar and salt using a hand mixer.
- Add the egg and vanilla extract and mix until just combined.
- Mix the dry ingredients (flour, TSUBAKI / Houjicha powder, baking soda) and add to the wet ingredients.
- Add the white chocolate chunks and fold in.
- Chill your batter in the fridge for 30 minutes.
- Bake for 7 - 8 minutes, until the cookies are starting to turn golden. Don’t overcrowd your baking sheets, you might need to bake a few trays!
- Remove from the oven and let it cool before eating!!
